Simple & Delicious Wood-Fired Oven Roasted Cherry Tomatoes

Ingredients:
- 4 cups of cherry tomatoes
- 2-3 tablespoons of olive oil
- Pinch of sugar
- Pinch of salt & pepper
- Pinch of basil
- 2-3 cloves of minced garlic
Directions:
- Preheat the Oven: Light a fire in your wood-fired oven and let it heat up to 400-450°F.
- Prepare the Tomatoes: Rinse the cherry tomatoes and dry them. If you prefer, you can cut them in half for a pastier surface.
- Season Tomatoes: In a bowl, toss the cherry tomatoes with olive oil, salt, pepper, and minced garlic. Make sure they’re well-coated.
- Roasting Pan: Spread the tomatoes in a single layer on a baking sheet or a cast-iron skillet. Make sure they’re not crowded to allow for even cooking.
- Roast: Place the pan in the wood-fired oven. Roast for about 15-20 minutes, or until the tomatoes are bubbling and starting to burst. Pay attention to avoid burning.
- Finish and Serve: Once fully roasted, remove the tomatoes from the oven. You can sprinkle fresh basil on top for added flavor.
