Simple & Delicious Wood-Fired Oven Roasted Cherry Tomatoes

In this recipe, we at ilFornino will show you how to cook cherry tomatoes in a wood-fired oven as a tasty alternative to pizza sauce. No sauce will be used, only cherry tomatoes and some additional ingredients on your trusty skillet! Let’s get started!

Ingredients:

  • 4 cups of cherry tomatoes
  • 2-3 tablespoons of olive oil
  • Pinch of sugar
  • Pinch of salt & pepper
  • Pinch of basil
  • 2-3 cloves of minced garlic

  Directions:

  1. Preheat the Oven: Light a fire in your wood-fired oven and let it heat up to 400-450°F.
  2. Prepare the Tomatoes: Rinse the cherry tomatoes and dry them. If you prefer, you can cut them in half for a pastier surface.
  3. Season Tomatoes: In a bowl, toss the cherry tomatoes with olive oil, salt, pepper, and minced garlic. Make sure they’re well-coated.
  4. Roasting Pan: Spread the tomatoes in a single layer on a baking sheet or a cast-iron skillet. Make sure they’re not crowded to allow for even cooking.
  5. Roast: Place the pan in the wood-fired oven. Roast for about 15-20 minutes, or until the tomatoes are bubbling and starting to burst. Pay attention to avoid burning.
  6. Finish and Serve: Once fully roasted, remove the tomatoes from the oven. You can sprinkle fresh basil on top for added flavor.
