Wood-Fired Butternut Squash Pizza

It’s that time of year when the leaves change color and the air gets chilly; time to fire up the pizza oven and stay warm by trying ilFornino’s fall-themed recipe for butternut squash pizza. Let’s prepare a bountiful harvest good enough to eat!

Ingredients:

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoon of olive oil
  • Salt and pepper
  • 1 teaspoon of ground or fresh sage
  • 1 teaspoon of garlic powder
  • 1 cup of ricotta cheese
  • 1 cup of shredded mozzarella cheese
  • ½ cup of Gorgonzola cheese
  • ½ cup of diced onions
  • 3 tablespoons of butter
  • Fresh arugula, for garnish

  Directions:

1. Prepare the Butternut Squash:

  • Preheat your wood-fired oven to 700°F.
  • Toss the cubed butternut squash with olive oil, salt, pepper, sage, and garlic powder. Spread on a baking sheet placed on a baking tray.
  • Roast in the oven for about 20-25 minutes or until tender and slightly caramelized. Remove and let it slightly cool .

2. Prepare the Onions:

  • After taking the squash out, place your cast iron skillet on top of the coals in your wood-fired pizza oven. Add 3 tablespoons of butter.
  • Add the onions and keep stirring them until they become dark and caramelized.
  • Remove from the oven when done.

3. Assemble the Pizza:

  • Divide the dough into 2-4 equal portions, depending on the desired pizza size.
  • Roll out each portion on a floured surface to your desired thickness (about ¼ inch is ideal).
  • Transfer the rolled dough to a pizza peel dusted with flour.
  • Spread a layer of ricotta cheese over the dough, leaving a small border around the edges.
  • Distribute the roasted butternut squash evenly over the ricotta.
  • Sprinkle mozzarella and evenly place gorgonzola cheese on top.

4. Bake the Pizza:

  • Carefully slide the pizza off the peel and into the wood-fired oven.
  • Bake for 2-4 minutes, rotating halfway through, until the crust is golden and the cheese is bubbly and slightly browned.

5. Serve:

  • Remove the pizza from the oven and let it cool for a few minutes.
  • Top with fresh arugula and drizzle with balsamic glaze if desired.
  • Slice and enjoy your delicious butternut squash pizza!
