Kaak, also known as Lebanese bagels, are a type of traditional bread from Lebanon. They are similar in shape to a bagel, with a circular shape and a hole in the center. However, unlike traditional bagels, kaak are typically made with a mixture of wheat and barley flour and flavored with anise seeds and nigella seeds.
To make kaak, the dough is first prepared by mixing together the flour, salt, anise seeds, nigella seeds, and yeast. The dough is then kneaded until it is smooth and elastic. Once the dough has risen, it is shaped into circular shapes with a hole in the center, similar to a bagel. The kaak are then placed on a baking tray and allowed to rise again before being baked in an wood-fired pizza oven until they are golden brown and crispy.
Kaak are often served as a breakfast food or as a snack, and they can be enjoyed plain or topped with a variety of spreads and toppings, such as cheese, hummus, or za'atar. They are a staple of Lebanese cuisine and can be found at bakeries and street markets throughout the country.
