How to get Started & Fire Up Wood Fired Oven

Welcome back to ilFornino Wood-Fired Pizza Oven Company. Today we’ll take you through the process of starting a fire and getting your oven ready to cook mouth watering wood-fired pizza pies. These easy steps will get your oven going in no time! Let’s show you how to start your wood-fired pizza oven.

First, start with 4-5 pieces of wood; make sure the wood is air dry or kiln dry wood. Oak is a good source of high Btu (British thermal unit). Stack the wood as seen in the video then use a firestarter to light some discarded newspaper. Make sure the damper is open and toss the lit newspaper onto the wood. After 8-10 minutes, put the door on but keep a small draft open to feed the fire.

It’s crucial to have patience while manning the fire. Add more pieces of wood as needed to increase the temperature. The oven should be ready in 30-45 minutes. When ready, open the door and brush all the ashes to the back of the oven. Move the fire either to the back or the side of the oven.

Now you’re ready to cook! Make sure your oven floor is only kept at a warm temperature and not a hot one, otherwise you will burn the bottom of your pizza. If this happens you can keep the door open and wait until the floor cools down or use a pizza screen. You can find screens in the accessory section of our website.
