You’ve heard of white pizza, but with this recipe, we’re adding a little twist for a more distinct flavor. We’d like to show you our unique white pizza recipe, aka gypsy pizza! Cooked oyster mushrooms and additional oils have been added to the traditional white pizza in this recipe and we know you’ll love it as much as we do. Let’s get cooking!

Ingredients for Pan-Fried Oyster Mushrooms:

  • Oyster mushrooms
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Smashed garlic cloves
  • Thyme
  • Sea salt

Ingredients for Pizza:

  • 200 grams pizza dough
  • Fresh mozzarella cheese
  • Olive oil
  • Bechamel sauce
  • Truffle oil

Directions for Pan-Fried Oyster Mushrooms:

  1. Prepare Mushrooms and Pan: Wash then cut the oyster mushrooms into equally sized pieces; pour two tablespoons of olive oil into the skillet and heat the oil on medium high heat.
  2. Cook the Mushrooms: Toss the mushrooms into the skillet and let them cook on one side for four minutes until they are browned. Flip the mushrooms and wait four minutes until the other side is browned.
  3. Add Seasoning: Add butter, smashed garlic cloves, and thyme into the pan and switch heat to medium low. Let the mushrooms cook until they are brown all over.
  4. Serve: Remove mushrooms from the skillet, add a touch of sea salt, then set aside.

Directions for Pizza:

  1. Prepare the Oven: Preheat your ilFornino wood-fired oven to 800°F.
  2. Stretch the Dough: Rub some flour on your hands and cooking surface then start shaping the dough to look like a circular pizza pie. Make the edges thicker to form a crust.
  3. Add Toppings: Place the chunks of mozzarella cheese on the dough, drizzle with olive oil, and add the oyster mushrooms.
  4. Cook in the Oven: After dusting it with flour, use a pizza paddle to insert the pizza into the oven. Cooking time should be one minute at 800°F. Rotate the pizza in the oven with a pizza wheel to cook it thoroughly.
  5. Add Additional Flavor: Remove the pizza from the oven and add Bechamel sauce, truffle oil, and thyme on top of the pizza for a boost of flavor.
  6. Cool & Serve: Once the pizza is cooled, grab a pizza slicer and dig in!
