The flavor and aroma of Italian Sausage define the essence of Italian food. Laced with Mediterranean herbs and spices, it adds an earthy elegance to any meal. Once the flames of the ilFornino Wood Fired Pizza Oven have died down, the hot bed of coal is the perfect environment for cooking sausages on a grill, as it creates a smoke-flavored crust that snaps when you bite into it. Let’s get started with ilFornino’s Italian sausage recipe!

Ingredients:

  • 4 links of Italian sausage (spice level based on preference)
  • Olive oil (optional, for brushing)
  • Fresh herbs

Instructions:

  1. Preheat the Wood-Fired Oven: Light your fire and allow the oven to preheat until it reaches 400°F to 450°F. You want a nice bed of hot coals over settled flames.
  2. Prepare the Sausages: If desired, brush the sausages lightly with olive oil for added flavor. Sprinkle fresh herbs over them for extra aroma.
  3. Arrange the Sausages: Place the sausages directly on a cast iron skillet or a baking sheet placed on a baking pan.
  4. Cook in the Oven: Insert the skillet or baking sheet into the oven. Cook the sausages for 15-20 minutes, turning them occasionally with tongs. The goal is to get a nice char on the sausages.
  5. Check for Doneness: Using a meat thermometer, check the internal temperature for 160°F. The sausages are done when they reach that internal temperature and have a nice browned exterior.
  6. Serve: Remove the sausages from the oven and let them cool for a few minutes. Serve with your choice of sides, on a bun, or sliced with pasta and marinara sauce. Enjoy!
